Lemon Berry Cheesecake Cups

Yields: 15 cheesecake cups

Serving size: 1 cup

Ingredients: 

  • 2 (8 ounce) packages or cream cheese
  • 1/4 cup lemon juice
  • 1.5 tablespoons of sugar free raspberry preserves
  • 1/4 cup Swerve confectioners sweetener
  • 6 ounce package of blackberries

Instructions:

    1. In a blender or food processor combine cream cheese, lemon juice, sugar free preserves, and Swerve sweetener.
    2. Blend mixture until smooth and all ingredients are evenly incorporated.
    3. Pour/spoon the mixture into a large plastic Ziploc bag or bag made for piping frosting and fillings.
    4. Pipe the mixture evenly into 15 little plastic or glass shot sized glasses/cups.
    5. Top each little cup with 2-3 blackberries and enjoy!

**Tip: you can play around with your choice of sugar free preserve to switch up the flavor (ex. mango, peach, blackberry, ect.). Also, you can switch out the fruit that you top the mixture with, based on what flavor preserves you choose. Keep in mind that berries are lowest in carbohydrate, while other fruits may result in slightly different nutritional compositions.
